White Bean and Sun-Dried Tomato Patties

Instructions

  1. Peel the onion and finely dice. Sauté in 1 tbsp of the oil until translucent.
  2. Grind the flaxseed, e.g., in a coffee grinder.
  3. Drain the sun-dried tomatoes of excess oil and chop finely.
  4. In a large bowl, combine the beans, rolled oats, flaxseed, soy sauce, spices, sautéed onion, and chopped tomatoes.
  5. Blend the mixture into a thick mass — it does not have to be perfectly smooth.
  6. Let it rest 10–15 minutes to thicken.
  7. Form into patties (6–12) and bake at 180°C until golden (20–25 minutes). Flip after 10 minutes.
  8. Once cool, freeze ⅔ of the batch.

Notes

Prep on Sunday — this batch makes 3 × 2 servings. "Przyprawa do mięs" is a Polish pantry seasoning blend (herbs + paprika + salt) — despite the name, 100% vegan.
