White Bean and Sun-Dried Tomato Patties

Instructions
- Peel the onion and finely dice. Sauté in 1 tbsp of the oil until translucent.
- Grind the flaxseed, e.g., in a coffee grinder.
- Drain the sun-dried tomatoes of excess oil and chop finely.
- In a large bowl, combine the beans, rolled oats, flaxseed, soy sauce, spices, sautéed onion, and chopped tomatoes.
- Blend the mixture into a thick mass — it does not have to be perfectly smooth.
- Let it rest 10–15 minutes to thicken.
- Form into patties (6–12) and bake at 180°C until golden (20–25 minutes). Flip after 10 minutes.
- Once cool, freeze ⅔ of the batch.

Prep on Sunday — this batch makes 3 × 2 servings. "Przyprawa do mięs" is a Polish pantry seasoning blend (herbs + paprika + salt) — despite the name, 100% vegan.
